			<description>Poboy bread in NOT supposed to be chewy.  It is supposed to have a crisp crust and a light center, just like good pain d'ordinaire, which is what it is. Lafayette makes a great etouffe but our poboys are generally 2nd rate. - IMJacquemo</description>
