Salads are often a precursor to the main course, but this one is an entrée of sausage, duck, shrimp and fish.

Pont Breaux’s Zydeco Salad is packed with protein and vegetables, making it a satisfying choice for either lunch or dinner. The salad consists of mixed baby greens tossed with bell peppers, tomatoes and boiled eggs, and topped with Louisiana andouille sausage, baked duck, boiled shrimp and blackened catfish. The dish is finished with a garnish of fresh Zydeco green beans.
